Ethan's Sourdough
Ingredients
  • Bread flour 900g
  • Whole wheat flour 100g
  • Active sourdough starter 200g
  • Tepid water 700g
  • Morton's kosher salt 20g
  • Warm water (salt mix) 50g
Method
  1. Combine starter with tepid water until well blended.
  2. Dissolve salt in warm water.
  3. In a large bowl, mix both flours with the starter mixture, then add the salt water. Mix until fully combined.
  4. Fold the dough every 30 minutes over the course of 3 hours (6 folds total).
  5. Divide into two loaves, shape, and place each in a banneton.
  6. Place bannetons in the fridge to cold proof overnight — up to 24 hours for more tang.
  7. Preheat oven to 500°F with a Dutch oven inside.
  8. Score the loaf, place into the hot Dutch oven, cover, and reduce temperature to 450°F. Bake covered for 20 minutes.
  9. Remove the cover and bake uncovered for another 20 to 25 minutes until deep golden brown.
  10. Cool on a wire rack for at least 1 hour before slicing.
